Guys I made this yesterday and I gotta admit is was awesome. I figured I had made enough to last until at least Friday but it was all gone yesterday. Once people in the office got a whiff they wanted some. It was a huge hit.


  • chicken breast (thighs)
  • ginger
  • one garlic clove
  • turmeric
  • 5 cloves
  • 3-4 star anise
  • Currey
  • cilantro
  • one can coconut milk
  • small can tomato paste
  • lemon grass
  • soya sauce (a couple splashes)
  • chiles (depending on how hot you like it)
  • parsley
  • rice
  • extra virgin olive oil
  • cinnamon
  • nutmeg (fresh)
  • chicken stock or cube
  • 2 limes
  • honey or brown sugar (white sugar is ok)


  1. take a bunch of cilantro, one fresh squeezed lime, parsley, peeled ginger, chili's and peeled garlic and put in blender or food processor with soya sauce and tomato paste. Blend. Drizzle olive oil to loosen and cup of chicken stock. You can add some pineapple juice, white wine or water if too thick. Don't worry if gets runny because it will reduce when cooking.
  2. Cut up chicken into bite size pieces and add to very hot pan with olive oil. cook for a 1-2 minutes on both sides. Until there is some nice color.
  3. Reduce heat to low and add blended ingredients. Cook for a 5 minutes.
  4. Once it thickens a little add entire can of coconut milk, turmeric, cloves, star anise and let simmer for half hour to 40 minutes. Stir occasionally. DO not burn the coconut milk.
  5. a few minutes before its ready, add the honey (sugar), the juice from a lime and some chopped cilantro.
  6. Pour over rice and enjoy.


The kitchen will smell amazing. The sour from the lime, the sweetness from the honey and the spiciness from the chili along with the amazing coconut sauce will make your taste buds sing. I should taken a picture and posted it but because it was so good. Next time.

I forgot to mention the lemon grass. You don't have to do it but it tastes good. Just smash the lemon grass with the back of your knife to release the wonderul flavor and stick whole into the pan when you add the coconut milk. Remove it when its finished. Its like bamboo.

Looks a lot like Tom Yum Gai, a Thai chicken soup. I love that stuff. Maybe I'll make your version.
